Mini Pumpkin Tarts infused with CBD
Try these pumpkin mini tarts infused with CBD that’s one of the most go-to treats during the holiday season as the weather cools down.
This recipe is extremely simple and almost no bake. The tart’s crust is delicious, made with gluten free oats and pecans, and mixed with maple syrup and coconut oil.
– ½ cup gluten free old fashioned oats
– ¼ cup raw pecans
– pinch of sea salt
– ½ tablespoon coconut oil, melted
– ¼ cup maple syrup (the real kind!)
To make the tarts filling you will need:
-15 oz pumpkin puree (organic is best)
-½ teaspoon ground cinnamon powder + a few shakes of nutmeg and cloves for extra flavor
-a tablespoon of fresh lemon juice
-¼ cup coconut milk (the kind in the can)
Start by pulsing oats and pecans into a flour like consistency. You don’t want any large pieces, so give it a few good pulses until you’re satisfied! Add in salt and remaining ingredients, except for the coconut oil.
Pulse until well combined and no large pieces of oats or pecans remain. Finally, add in the melted coconut oil and pulse a few more times to combine everything into dough-like consistency! If it’s too dry you can always add another teaspoon or two of maple syrup – if it’s sticky use some extra oats to absorb the extra liquid.
Form about 15 even balls and press them into your tart pan! Place in freezer for at least 30 minutes before filling with pumpkin pie filling (recipe above). Use a piping bag or spoon, but make sure they are tightly packed together so the tarts will hold their shape while baking!
Bake at 350 for about 20-25 minutes, until the crusts are golden brown. Once cooled you can top them off with some fresh whipped coconut cream (recipe below) and cinnamon or maple syrup!
Coconut Cream Topping
– Beat one 14 ounce can of full-fat coconut milk in a large bowl with an electric mixer on high speed for about three minutes, until it is light and fluffy.
– Add in two tablespoons of maple syrup or honey (we recommend the real stuff)
– Mix again to combine
Now you’re ready to assemble! If your coconut cream has liquid at the bottom don’t forget to give it a good stir before adding it on top of your pumpkin tarts!

– 200g Cranberry Juice Concentrate, thawed
– 500g orange juice, freshly squeezed if possible.
– 25 g Sugar substitute of choice
– 750 ml Sparkling Water
– 400g Bottle of Club Soda, chilled

Divide between two large glasses filled with ice cubes, leaving room at the top for sparkling water. Stir gin or vodka and cranberry juice. Pour carefully over the orange juice to fill each glass.
